Terjola's Restaurant Rzlebi Sets Expansion Blueprint: Focused on Women's Entrepreneurship and Sustainable Dining

Terjola-based Restaurant Rzlebi has ambitious plans to not only expand its culinary operations but also to drive women's economic empowerment within the region. Co-founder Keto Puturidze revealed to Business Partner that while the establishment currently employs three women, it intends to bolster its female workforce in the coming year.

Puturidze confirmed that discussions are actively underway with local women entrepreneurs for the launch of an adjoining craft store. This dedicated space will showcase a variety of products created by female artisans, highlighting Rzlebi's commitment to facilitating entrepreneurial opportunities for women.

Housed in a converted residence, the restaurant has earmarked an investment of approximately €5,000 for infrastructural enhancements. This will primarily fund the construction of an outdoor kitchen, outfitted with modern appliances and a supplementary stove. Puturidze emphasized Rzlebi's culinary philosophy of blending authentic local flavors with a contemporary twist.

"In just a month of operations, we've been inundated with an extraordinarily high level of demand, attracting a global clientele from countries like France, Germany, South Africa, the United States, and the United Kingdom," Puturidze said.

In an eco-conscious move, the restaurant sources its produce from an on-site vegetable garden and utilizes organic red drumsticks for its artisanal bread, further fortifying its commitment to sustainable, locally-sourced ingredients.

As part of its long-term strategy, Rzlebi is exploring the feasibility of erecting holiday cottages on its expansive 4,000-square-meter property. Estimated investment costs for this additional venture are pegged between 40,000 and 50,000 Georgian Lari.

Rzlebi, which commenced operations in July of this year, has rapidly emerged as a culinary and social hub. The establishment operates on a seasonal basis, serving patrons from spring through autumn.
