New Craft Brewery Ishvi to Launch in Tbilisi Following Three Years of Development
A new craft brewery, Ishvi, is set to open in Tbilisi at the end of June, introducing a range of beers that its founders say will stand apart from both industrial and existing craft beer offerings on the local market.
According to the company, the brewery will have an annual production capacity of 365,000 liters and will operate its own laboratory, where both raw ingredients and finished products will undergo regular quality control to ensure consistency and high standards.
The founders note that the launch follows a three-year preparation period, during which they studied brewing practices in various countries and conducted extensive tastings to refine their products.
"Before constructing the brewery, we acquired small-scale brewing equipment and completed around 150 test brews. Our primary goal was to create beer of consistently high quality. As beer enthusiasts ourselves, we often found it difficult to discover products on the local market that met our expectations. That inspired us to develop our own recipes and establish a brewery whose quality we could always stand behind. As a result, Ishvi will offer beers crafted from carefully selected, premium ingredients," the company said.
At launch, Ishvi will introduce five beer styles:
- NEIPA (New England IPA) – featuring intense tropical fruit aromas, vibrant citrus notes, and a velvety mouthfeel;
- WIT – a Belgian-style wheat beer with refreshing citrus and subtle spicy characteristics;
- Stout – a rich, velvety beer with deep coffee and cocoa notes;
- Lager I – a clean, balanced lager combining classic drinkability with a modern craft approach, resulting in a light and harmonious profile;
- Lager II – inspired by German brewing precision and contemporary craft philosophy, offering an elegant, full-bodied, and aromatic experience.
The brewery will also feature a dedicated beer garden, providing visitors with a space to relax and enjoy freshly brewed beer on-site.
Initially, Ishvi beers will be available at the brewery's beer garden, as well as at selected bars and restaurants. Looking ahead, the company aims to capture 20% of Georgia's craft beer market, while future investments will be directed toward expanding production capacity.
