The American businessman John H Wurdeman had strong wish to open up his own restaurant. Finally, his wish came true and he launched the first provincial restaurant in Tbilisi with his Georgian partner Luarsab Togonidze. The name of the restaurant is “Pilpili”.
Wurdeman went to Georgia in 1996 and settled in the town of Signaghi, in the centre of the country’s wine region. He lives there with his wife Ketevan and their two children and runs a winery, Pheasant’s Tears, dedicated to preserving Georgian wine culture.
The restaurant will visit each provincials of Georgia for 3 months. Its journey had started from Tusheti region. As Luarsab Togonidze points out the idea of restaurant concept creation belongs to John.
“Over the years we were traveling around Georgia and visited its different parts. Afterwards, we have decided to open our own restaurant, in order to make available for anyone wishing to taste such delicious food the households prepare in the regions. As a result, we have developed such conception: during 3 month period, one of Georgian region will host us in order to be specialized and qualified in terms of cooking traditional regional dishes”, – said Luarsab Togonidze.
