New Restaurant Barbarestan offering XIX century Georgian famous and unknown dishes opened in Tbilisi recently, Marketer.ge reports.
Barbare Jorjadze was a member of Georgia’s 19th-century aristocracy who published all recipes of Georgian dishes in a single book.
The idea belongs to company 2L Gastronaut, which works on innovative restaurant concepts.
Despite her lack of formal education, Barbare emerged as one of the first Georgian women who did not fear public reproach for going into writing. In 1874 Ekvtime Kheladze’s printing house printed her cookbook Georgian Cuisine: Tried and True Family Methods, which includes both Georgian and European dishes.
“Our restaurant focuses on healthy nutrition, all the dishes are prepared with boiled butter. We found one family in Guria who prepares boiled butter. We regularly purchase the product from them. We also deliver Turkey, especially from Imereti. We at Barbarestan make an effort at finding healthy products,” Levan Kokiashvili said in an interview with Marketer.ge
We offer different dishes, such as Cornel soup which is astonishingly delicious. Every dish here has a new taste, including desert which we called felamushi cake (made from grape must and flour) which is very interesting.
